I’ve been trying to expand my vegan cooking basics, and delving into sauces and creams seemed to be the next natural step. I had put these vegan staples on the back burner for so long out of sheer intimidation. I mean, I am a Wisconsin girl at heart, and it scares me to make substitutes for cheese and cream.
Alfredo sauce is one of those foods that blows my mind to try to create a vegan version, so naturally I had to try. As I Googled countless vegan alfredo recipes, there was no easing my fear of tackling this sauce. Every recipe called for ten-plus ingredients, most of which I didn’t have on hand, and required both time, and more steps than I could wrap my head around.
I wanted to a simple sauce that I could throw together in about as much time as it takes to open a store-bought jar and heat it. Making dietary changes should’t be time consuming or challenging. So I sought out to create a sauce that was both easy and tasty.
I had created this sauce to pour over noodles, and ended up using it in a handful of ways. Not only did I enjoy it on pasta, but it was delicious as a vegan pizza sauce, and as a cooled veggie dip. So make a batch today, and let me know what new ways you discover to use this versatile sauce!
On any given day, I’ve got multiple types of nut/seed milks in the fridge, including a few homemade. You can say I am a bit obsessed with non-dairy milks… lately my go-to has been an incredibly smooth Vanilla Cashew Milk that takes only 2 minutes to make! For this recipe though, stick to a plain dairy-free milk, without any added flavors.
For this recipe I chose a flax milk. Turns out I’m not a big fan of plain flax milk, so I’ve been finding recipes to include it in, and this one was a hit! You can use any dairy free milk you have on hand, but the flax milk gives an extra level of creaminess to this simple sauce.
Hemp hearts are these incredible little add-ons that are excellent sprinkled over your salad, in your smoothie, and topped on homemade ramen. But when I bought my first bag, I got it at Costco, and if you know, you know. This giant bag needed more uses than being just a high-protein addition to meals.
To keep this recipe true to it’s name, throw all the ingredients in your high-powered blender or food processor and whip it up. I like to heat the sauce before serving, but it can be used cool as a veggie or bread dip too.
Vegan Alfredo Sauce
Ingredients
- 1 cup Hemp Hearts
- 1/2 cup Flax Milk
- 1 Tbsp lemon juice
- 1/2 tsp sea salt
- 1/2 tsp pepper
- 2 cloves garlic (optional)
Directions
- Place ingredients in blender
- Mix until smooth
- Heat and serve. Can it get any easier?
**Pour leftovers into an airtight container and place in the fridge for up to 5 days.
